Tater Tot Casserole


So last week my husband came home with girl scouts cookies.  Much to my disappointment he didn't buy any Thin Mints or Samoas (That has to be sacrilege right there).  He had boughten Tagalongs (hubby is a peanut butter freak) Trefoils and Thank You Berry Much.  Now is it just me, or were those berry cookies gross?  They reminded me of the generic chocolate chip cookies Walmart sells and tries to pass them off as Chips Ahoy.  They were hard, and kind of tasted like cardboard.  If they are going to keep increasing the prices and decreasing how many you get, at least make them taste good.  Maybe it's just me.


Anyways, on to the recipe.  Comfort food at its best.  I think everyone just about has a tater tot casserole recipe.  This one I created adding on to the original I had gotten from my mother.  The addition of cheese and French fried onions really kick it up a notch.

Tater Tot Casserole

1 lb Ground Beef
1/2 Onion, Diced
1/2 tsp - 1 tsp Seasoning Salt
1 Can French Style Green Beans, Drained
1 Can Sweet Corn, Drained
1 Can Cream of Chicken Soup
1 Can Cream of Mushroom Soup
1/4 tsp Black Pepper
1/2 tsp Garlic Powder
2 Cups Shredded Cheddar Cheese, Divided
1 Cup French Fried Onions
1 Bag of Tater Tots

Preheat oven to 375 Degrees F.  Season ground beef with seasoning salt.  Brown meat and onions until done.  Drain of grease.  Layer meat in a 9 x 13 inch casserole dish.  Layer the green beans and corn on top.  In a bowl mix together soups, black pepper, garlic powder, and 1 C cheese.  Spread on top of meat mixture.  Top with French fried onions followed by tater tots.  Bake for 30 minutes.  Top with remaining cheese and bake for 10 more minutes.
