Simple Drop Biscuits


This recipe is probably the one I make the most.  It is so simple to make with very few ingredients and great when your running late on dinner.  It is also my husbands favorite biscuit.  The recipe comes from Christy Jordan, her recipes are so amazing.  This is the same recipe that makes her hoe cake.  I've tried making it a few times but still have not gotten it to come out right, so I'll stick to the biscuits for now. Strange that it comes out perfect one way but not the other.

 They are light and fluffy and taste great with butter and honey ( I love me some honey on my biscuits).  The crispy bottoms are so delicious.  



Simple Drop Biscuits

2 Cups Self Rising Flour (See Note)
1 Cup Milk
1/2 Cup Shortening
Oil

Preheat oven to 425 Degrees F. Pour a thin layer of oil in a rimmed baking sheet.  Put in oven to heat. In a large bowl cut shortening into flour until it resembles small pebbles.  Pour milk in and stir until mixture is wet.  Remove pan from oven.  Drop large spoonfuls of batter onto hot pan.  Spoon hot oil over the top of biscuits.  Bake for 10 - 15 minutes until golden brown.

*Note* If you don't have self rising flour, substitute 1 Cup All Purpose Flour, 1 1/2 tsp Baking Powder, 1/2 tsp Salt
